A tasty treat I developed years ago as a vegetarian dish and added in turkey. Good for a Sunday night meal with plenty leftovers. Freezes well, too.
The veggies can be exchanged for others, my picky eaters prefer finely diced squash since in texturally disappears into the beans and meat. And I like a LOT of spices, so taste it a few times along the way.Submitted by DRAGONSPITTLE

Cookbook creator says: A thought it was bland and too crunchy with veggies. So next time, I'll leave out the parsnip and lighten the squash and maybe add another pepper. Cookbook creator says: A variation on my favorite, Roast Chicken! I like using the under skin method to flavor the bird since the meat gets all the goodness, rather than the skin. Putting it in at a higher temp helps to seal in the moisture and makes for a juicy chicken (info I learned long ago from the Joy of Cooking).Submitted by DRAGONSPITTLE

Dairy and gluten free. Could easily be converted to tofu instead of turkey for vegetarian options.
