I love eggplant, zicchini, peppers with a lot of spice. To add some body, black beans make this great vegetarian dish delicious! Serve over rice/pasta, top with parmesan cheese and/or sour cream. Tastes epecially good the second day, flavours mingled.Submitted by NMCDEE
I love Chili's Southwestern Eggrolls. They have so much tasty stuff in them, but I hate the fact they are deep fried. I added more beans and corn and then put them in the broiler for crunch.

This is a fast, easy and delicious way to get in fresh raw broccoli. I adapted the recipe from the Whole Foods Broccoli Crunch Salad. The ingredients are simple and relatively inexpensive but they charge $8.49 a pound for it....much cheaper to make at home....and fresher.Submitted by CLAUDIA1896
