DON'T THROW OUT THAT CHICKEN!!! This is a great use for that “left over chicken” piece. This is based on only 3 ozs but can be made in larger quantities per portion. Submitted by TLB1630
These make a great appetizer for that special party. Kids even like them for lunch or as an evening snack.
tomato 3, carrot 2 and onion 1.finely chopped.
Place a pan on the stove, pour 2 spoons of oil, fry onion till light brown, add carrot cook for 3-4 minutes, then add tomatoes and cover the lid . cook for 5-7 minutes till the vegetables are cooked. Then blend in a mixie, add little water and 1 tsp salt, bring to boil.
Serve hot with pepper powder and croutons.

If you want an appetizer to take to your next gathering look no further than this easy and delicious cheeseball. I serve it on a tray with crackers and fresh fruit, usually grape clusters.
