This is a great way to use up those leftovers from Christmas dinner potatoes, turkey (or in this case chicken) as well as substitute any other left over veggies (we had left over broccoli and carrots) Submitted by KOOLCHIK

Got the idea from someone else's recipe and added my own spin to it. This will serve 8 with a salad and side(we like it with grilled veggies) and optionally a side of sour cream and salsa (not accounted for in recipe) and there will probably be left over beans. Heat the beans and serve as "dip" with nachos or veggies or to top a salad. To decrease the fat, substitute in a lower fat cheese - we just didn't have any when I tried this, this recipe calls for 2TB of cheese for each torilla but you can also cut that back to 1 TBp to save on fats. Just banana muffins - you can lower fat but substituting unsweetened apple sauce for the oil. (I just didn't have any) and add raisons or choc chip or nuts as desired (not accounted for in recipe) Submitted by KOOLCHIK
