A lovely filling soup that can be served hot or cold, making this a year round offering. I've set it at 6 servings for using it as a full meal. It will be less (obviously) if you're having it as a starter. Also, I used Blue Dragon Coconut Milk Light, but the recipe analyser isn't recognising the decreased calories for some reason. This means that there's a 525 calorie difference, which, if you divide it by the number of servings (6) means that each serving is 87.5 calories LESS per serving than is shown here.Submitted by MRS.DORMOUSE
Try a two for one: The next time you are turning on the oven to 375 degrees, roast the squash, cool it slightly, peel and package to freeze. You'll have butternut squash on hand whenever you need it, and you can have dinner on the table in no time!

Cookbook creator says: I made this for the nutrition in the carrots however the ingredients were too spicy for me. They drowned out the carrot flavor altogether. I will try it again and eliminate some of the spices like the cayenne.Submitted by EHD630
Considering that a regular 1 cup serving of French Onion Soup can contain800+ calories, i think this is a vast improvement!
