I have modified this recipe from the original found at www.landolakes.com, to make it also casein-free. if you don't have to worry about dairy or casein in your diet, you can go ahead and use 3/4 cup real butter. I also reduced the amount of chocolate chips from 2 cups to 1 1/4 cups because that's all I had on hand when I made them.
Also, I successfully used Bob's Red Mill All Purpose Baking Flour instead of making the separate GF Blend as recommended by Land O Lakes (see "cooking instructions" below for their GF blend recipe).
Nutrition Facts Discrepancies: My recipe program calculates the nutrition as 257 calories per cookie. the landolakes website lists calories at 130 g per cookie (See all their nutrition facts under "cooking instructions" below). And of course SparkPeople calculates the calories as 262.2 per cookie. So, take the nutrition facts with a grain of salt, or calculate it yourself to get a number you are comfortable with.Submitted by SCHELRY
Banana bread made with your choice of natural sweetener: honey, agave, or maple syrup. Tastes absolutely wonderful and has a perfect texture!
Oh - as an added bonus there is no oil in this recipe, either!Submitted by KRAVMAGAGIRL
I made these for the first time and they were not only easy to make, but the first gluten-free product I've ever made that tasted perfect! Doesn't hurt that you can finish up the bottle of pink champagne while you work.Submitted by SUPERWOMAN0461
This is a coffee cake variation on the standard chocolate mug cake. You can make it with 3 T wheat flour instead of the rice & tapioca flours and potato starch. You can substitute regular flour for the buckwheat, too, but the latter gives the cake a nice homey taste. But don't make it alone or you'll eat the whole thing.Submitted by ELENASAN
The beauty of this little cake is that it takes hardly any time to make, you don't dirty lots of dishes, and you don't have lots of leftovers to tempt you. The nutrition info is calculated BY THE OUNCE (7 oz cake). If you eat the whole thing yourself in one sitting, multiply the numbers by 7. Better yet, share it with a friend or two.Submitted by ELENASAN
This recipe was such a hit with my family on Thanksgiving - they hadn't realized it was Gluten Free - Enjoy
I topped it with Coconut-Pecan Frosting - recipe also included on this site :)Submitted by JANSAPPHIRE
these cookies are the best alternative for those of us with many food allergies, like gluten and lactose... very easy to put together and bake in a few minutes. I've added the flour i use into the food list in this site to calculate the final nutritional infoSubmitted by LOSER8066
