The pine nuts really complement the lemon flavor, but if you decide to leave them out, you can deduct about 30 calories and 3 grams of fat per serving. I also used Wegmans Vegetable Stock which is lower in sodium than most regular vegetable stocks.

This simple, nutritious soup can be changed to your liking by making your own broth or switching the types of beans. I used green lentils, but red lentils, and garbanzos are great as well. Submitted by BRANUBODY08
Check out the stats on this one!!! This is probably one of my favorite things to eat, ever, but especially in the summer! It's very cold, very fast, VERY HEALTHY, and just so very yummy. A colorful side dish to bring to a barbecue!
