If you are in a hurry, you can just use canned beans and increase the vegetable broth to 6 cups. The cannellini beans can be made the day before, stored in their broth and used when you make your soup. This is how this becomes a "quick" minestrone.
In the winter/spring I use frozen green beans and canned tomatoes from my summer garden and fresh chard which grows like a blessing all year round. In the summer, in goes the ubiquitous zucchini. This quick minestrone has about 7 servings of veggies in each bowl! Submitted by MADDY_AVENA
This is the best thing for your body, if your fighting a flu or cold or the flu. It's loaded with natural vitamins and and minerals which are proven to help flushing out bacteria, toxins and viruses. Make sure all the ingredients are organic and the water is distilled. This is just basic vegetable soup. It's amenable to whatever veggies you happen to have around, and is great for using up leftover vegetables.
I did the nutrition calculation for 1 cup of soup; eat as much as you want. :-)

I took the typical traditional recipe and made it faster, easier, and taste much better. My kids LOVE it and beg me to make it often! Everyone who has ever tried it absolutely loved it! Yummy! Good for lunch or hearty enough for a satisfying dinner with a salad. Submitted by HMSCHLMOMOF3
A simple, warming and hearty soup that's fast to prepare. Sodium appears to be high but that depends on your chosen broth and if you drain and RINSE the beans the sodium will be much lower than reported here. Submitted by MEGABOMB
