This is a recipe for crepes, the very thin French version of pancakes. The yogurt in the recipe acts as a thickening agent, cutting down the amount of flour needed. You can use any flavor of yogurt you want to change the taste of your crepes.
Crepes are great for many different types of meals. Fill with sugar free syrup with fruit or sugar free preserves for breakfast. Cheese and grilled veggies for lunch! Or add some low fat Cool Whip, sugar free chocolate syrup and your favorite fruit for a guilt-free dessert! I love experimenting with all the different things I can make with them. This is a great, high protein, low sodium, low carb turkey meatloaf that tastes marvelous! It freezes well in single serving portions for a quick protein that you can take with you and tastes just as good as fresh from the oven.
