One of my greatest problems with maintain weight loss is that I have separate cookbooks. I have authentic Italian fare, American favorites and then "diet food" cookbooks. Its like having split personalities.
My goal is to blend my recipes into a new, healthy legacy for me and my family.

This is my family's favorite Italian wedding soup. The mini meatballs are a huge hit with the kids. Although many people use spinach for the leafy green in wedding soup, the recipe that was handed down to me called for endive lettuce, so that is what I use. Endive costs a lot less than spinach, and my family and I have always enjoyed our soup made with it. . If spinach is your favorite, feel free to make a substitution.Submitted by KECDMC
My neighbor gave me this awesome recipe that her grandfather used to make. It used regular pork sausage and way more cheese and butter. This is my low cal version. I serve it with 1/2 cup of cannelloni beans and I add those to my calorie count separately. You could cook them in the soup though and add them into the recipe. (My boyfriend won't eat the beans.) These are certainly not low-cal, nor low fat. But they have lots of good fats and are very filling. I like to cut a bar in half, and eat one half before working out, and the other half after. To keep it healthy, you probably ought to figure one medium potato per person. However, you may crave more. Just a warning. I use red potatoes and leave the skin on. More fiber and potassium.

i am crazy for cheesecake ( new york style) but, it has way to much fat, sugar and calories for me to fit it into my new lifestyle.
