I had to try and find a way to lower the fat and sodium so I could enjoy these without the guilt! I tweaked that recipe a bit to lower the sodium and fat, and came up with a winner! My husband needed a high-protein breakfast that he could just microwave on his way out the door each morning. Since I have 4 boys under the age of 7, this is a great way to eat fast and fresh. I serve this with salsa on the side.
