This hummus and feta wrap is so quick and easy if you store pre-cut vegetables in your fridge. It is a great, lowfat, heart healthy lunch!
This quick and healthy side dish takes just minutes to prepare! And as a bonus, it's an easy way to get the kids to eat their vegetables. (And if you don't like using butter spray, you could melt a few pats of butter and brush the butter on with a pastry brush - whatever your preference!)Submitted by MATCM81
This is easy to make and is very nutrious for you! Quinoa was revered by the Incas and feed it to the Warriors.
This recipe came about because I had just made vegetable enchiladas and had leftovers, plus quinoa from earlier in the week. Thankfully, this experiment yielded a hearty, delicious meal. Submitted by STEPFANIER
From FitSugar.com who Adapted the recipe from from Esalen Cookbook. Nothing beats a hot bowl of soup on a cold Winter's day. Add the warming spice mixture of curry to the pot, and your bowl of soup will taste as if it has extra powers to combat the chilly winds. Since Winter squash is one of my must haves for the month, I made a pot of butternut squash soup with curry and coconut milk. The effect is doubly warming but also somewhat sweet. Don't worry, I used light coconut milk that contains 68 percent less fat than regular coconut milk, significantly cutting the calories of this tasty soup. To cut fat further, substitute one can of coconut milk with chicken or vegetable broth, as is done here. Serves 6.Submitted by NPWEST
This is a recipe i put together last night with the veggies I had in the fridge and my husband and daughter LOVED it. Very yummy over ride pilaf or couscous. You can add chicken or fish to make this a non-veggie mealSubmitted by VEGGIEDOC4LIFE
