Really yummy, healthy and rather cheap to make. My husband and daughter love this recipe. It is a spin off of the traditional chicken and rice. I listed portions for serving of 8(food for 2 days), but you can cut down if needed. Submitted by YCATSTOUCH
This dish is easy to prepare - mix all ingredients (and salt and/or pepper to taste) and marinate with chicken for 10 minutes up to 24 hours before (refrigerate if marinating more than 20 minutes). For Honey, note that 1 tbsp = 3 tsp (i.e. 2/3 tbsp = 2 tsp). Feel free to substitute seasonings to taste.

Easy, kid- and hubby- friendly crockpot meal.
Sprinkle thyme on chicken breasts liberally, saute for 6 minutes each side in olive oil, remove chicken, add honey and vinegar to pan, stir until thickened, return chicken to pan, coat with glaze and serve.Submitted by FLAPASS
This recipe uses canned vegetables and is useful for somebody who doesn't have a lot of refrigerator space to keep fresh vegetables. However, for a fresher taste you can always use the fresh veggies! It's pretty filling, and fairly low-calorie for 1 cup portions.
