I'm a college senior (trying) to be dedicated to low-cal eating! I haven't tried these yet, but I plan to play with these recipes this summer when I move into my new apartment. I plan to modify a lot of these recipes, but I like the base of what these dishes suggest!

I love eating quinoa and veggies, but I needed something a little more filling and tasty, so I've added salsa and egg whites. This recipe makes one serving because I cook for myself.
Add/substitute veggies to your taste and add your favorite seasonings. I love using Tony Chachere's Salt Free Creole Seasoning.
It's not very pretty looking, but I think that it's delicious.
One reason I really like this recipe is because it can be easily adapted. I think that mushrooms would make a great addition to this recipe. You can cut down on the meat used, or add more. If your family has a favorite herb, substitute that.
