This is a modified version of my original Fiber One protein bar recipe posted on my blog. This one cuts out the artificial sweeteners except what is already present in your protein powder of choice, and adds in a bit of coconut for flavor and texture. It tastes like a krispie treat smooshed on top of a chocolate Tootsie Roll infused with just a hint of coconut, raisin, and peanut butter, and it is dairy-free and artificial sweetener free except for the protein powder. You can try to find a Stevia-sweetened, non-dairy protein powder if you like. Also, note that one bar has over 7 grams of fiber, which is over 1/4 of your recommended daily intake.
At 226 calories, 29 g carbs (7 g fiber), 20 g protein, and 6 g fat, this is suitable as a portable meal replacement or post-workout snack for those of you doing Body-for-Life, South Beach, the Zone, or other similar plans.Submitted by CAUSTICMUSE
These burgers are spiced to perfection. To make them even spicier, you could melt jalapeno soy cheese on each patty and serve topped with salsa.
These cheesy stuffed mushrooms are a light vegetarian meal or a hearty side dish.
This is a GREAT summer recipe to bring to a cookout! It looks so pretty in a trifle bowl ($10 Bed Bath & Beyond.com), takes no time at ALL to make and no one will guess its a healthy treat!
I put 12 servings in the nutritional info but that is a good size serving - even half that would definitely suffice!
Also - using the vanilla sugar free pudding cuts the cals a decent amount and doesnt sacrifice taste at all.Submitted by ASHLEY82083
My Mom used to make this with ground beef. It's a super quick and easy comfort food that I lightened up using ground turkey. You can adjust the soy sauce and sugar to taste.Submitted by CHOOWY
Creamy pudding makes fantastic frozen treats.
