Using low-fat milk instead of cream lowers the saturated fat content in this hearty summer soup.
What's so French about this toast, anyway?
Delicious low fat vegan version of this ever popular Greek dish. Delicious served with a crisp green salad and a few black Olives! The tomato sauce makes enough for two dishes, I usually freeze the other half. The Nutritional information is calculated for the whole amount of tomato sauce - not sure what it would be using the amount for this recipe - but it's less.Submitted by TREEHUGGER73
Tomatoes form the base, 4 beans and lentils make this hearty. Meat and dairy products can be added, but are not necessary. Makes 16 hearty servings that each have 50% of your daily fiber intake.Submitted by UOFIGIRL
This hearty stew is low in calories, high in protein, and easy to make! Add a dash of Cayenne pepper if you like it spicy! Served traditionally with Injera bread, but also tastes beautiful with brown rice or ladled over spaghetti squash. We buy Berebere at Cost Plus World Market. It can also be purchased online. We have included instructions to make your own Berebere if you are unable to find it. Definitely worth the trouble to make!Submitted by KKS5369
