To decrease calories you could substitute applesauce for some or all of the canola oil, just be sure to use non-stick spray inside your paper muffin liners. The egg could also be replaced with two egg whites. I made this for my son's birthday and was serving it to other people's kids, so I didn't make any lower fat substitutions .
