I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 284 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings!Submitted by STEPH2003

Spritz with olive oil and bake the breaded eggplant instead of frying for a lower calorie meal. May also use fat-free cheeses, but we love the recipe as written.Submitted by GETTO140

This is a combo of my Chicken Pot Pie filling and my mother in-law's Biscuit Style Crust. They go together fabulously. This is awesome with a double crust, but if you are watching your fat intake, it is also yummy with just a top crust. Also, the homemade gravy is wonderful, but if you have leftover gravy or prefer to use canned or jarred, this is even easier. Enjoy!Submitted by KARENMON

Tuna noodle casserole without the tuna. Use chicken leftovers or substitute turkey for chicken and use after Thanksgiving with some leftovers. If you're watching your sodium, replace the soup and don't add any salt.Submitted by JBEATTY81

Brown turkey with seasonings . Add tomatoes green pepper onion mushrooms with liquid and bouillon bring to boil.Add macaroni and contionue to boil 20 minutes uncovered or til al liquid is absorbed. Submitted by SMOOKYP
