I’m a big fan of tuna salad sandwiches. They’re easy and quick to make, are relatively healthy, and are equally as good as an office lunch or in a picnic basket.
There are three key ingredients at work with this version. First off is the lemon juice and zest…it gives the tuna a light, summery flavor that hits immediately. Second is the toast…if you try it straight from the bowl, it just isn’t as good; you need a warm, dry piece of bread to help the flavors burst in your mouth. Third is the cottage cheese…you don’t taste it at all, but it makes the tuna salad so rich and creamy.Submitted by MDKIMIST
This is just a very basic chicken salad for topping off greens or slapping between a couple slices of bread. It's a basic recipe which, in the past, I've done with much more mayo - the milk thins out the mayo and helps spread the flavor out in this variation. Adding dried cranberries or chopped nuts makes it even better, but doing that, one should remove the relish and add a little more milk (maybe up it to 3 tablespoons of milk). I have always liked vegetarian "burgers" as an alternative to their high fat, high sodium meat counterparts. When my co-workers and I decided to go to Chili's for lunch, I assumed that the "Guiltess Black Bean Burger" would be just that...or at least a healthy alternative. It sounded delicious, but when I looked up the nutritional content before we left the office, I was shocked to see that one burger contained 1790 mg of sodium...More than I would like to consume for an entire day!! Since I'm watching sodium content, this was clearly not a good choice and I ordered something else. I figured I could make a much more heart healthy recipe and add some avocado, one of my favorites! This recipe came from the chicken enchilada recipe I submitted earlier. I didn't need to make that many chicken enchiladas, so I made this up to make a slightly different meal.
