Cookbook creator says: We loved this. It’s a good replacement for the calories in the real thing. The only problem was in baking time. 45+ minutes was not enough to cook the eggplant through. Next time, I will up the oven temp to 375, bake for 45 min covered and then another 30 min uncovered. I think that would do it.Submitted by KHILKEY

Cookbook creator says: WOW! ZOWIE! Oh Mama- This recipe IS A KEEPER. I served this over Curried Couscous. It was both pretty & delious. My husband RAVED. One little change: I would heat the sauce in a microwave just enough to get the peanut butter to mix. It melted in the frying pan, but it didn't spread to every bite-YUMSubmitted by SONJA14

This is like most of the other salmon patty recipes on SparkRecipes, EXCEPT you don't have to get your hands messy making the patties. In this recipe you just scoop out the mixture with a measuring cup and plop it in the frying pan.Submitted by DILBERTA
Cookbook creator says: Very good. I did substitue slices of chicken sausage (with spinach & cheese) for the chicken breast and it added lots of flavor. My husband would still prefer a traditional pasta sauce, but I liked this healthier alternative.
Cookbook creator says: I added onion, carrots & mushrooms. I used half the Italian dressing mix & added italian seasoning. I used half the cream cheese, 1 oz alloutte garlic & herb spread and 3 oz low fat sour cream. Yummy served over bisquits.Submitted by ORANGECOWCAT
Cookbook creator says: I didn't have smoked salmon in the house so I used canned crab meat. Then I added about 1/3 each of diced onion and green pepper. Very yummy. We had it for dinner with a salad & cranberry sauce and I had it again for breakfast with toast and turkey sausage.Submitted by SLEDDERSTEPH
Cookbook creator says: Very tasty. The recipe makes about 30 small meatballs- so 5 meatballs per serving. It's not a big serving, but fairly filling if served over noodles or rice. You will probably want to serve this with a salad, vegetable or both.Submitted by KENHICKS
