This is a tweaked recipe shared by a Spark friend. It is also my first Spark Recipe, so go easy on me. The nutritional info doesn't match exactly to what I have, but it's pretty close. These muffins are fantastic and I recommend you have plans to freeze or share them so you don't eat them all. Don't be afraid of the whole wheat flour. Due to the bananas these come out moist and delicious, not dry and compact.
This recipe makes about 24 mini muffins or 12 large ones. (It usually seems to make a little more, maybe 28 small ones or 13 large, etc.)Submitted by LADY_JOSIELOT
This is a healthy, under 100 calorie, low fat, low sugar way to get some whole grains in while feeling like you are having "dessert"! If you have any left over plain (non- seasoned) cooked brown rice this recipe is even simpler! Submitted by JAN11661
Zucchini bread recipe. This recipe originally called for 1 cup of walnuts. However, I have made it many times, omitting the walnuts and it is still delicious. If you choose to add the walnuts, the nutritional information would need to be recalculated.Submitted by JHOLLAND8178

This recipe is based off of one that I read in a magazine a long time ago. You can substitute your favorite yogurt in place of the type I used, and your own spices as well! I sometimes sweeten mine with a teaspoon of brown sugar (not included in ingredients/nutritional info). Your mileage for nutritional info may vary based on what you use!
Also, I find that one portion is too much for me to eat in one sitting, so I normally split it into two. Even if you eat the whole bowl, it's still a filling and nutritious snack for less than 200 calories! :-)Submitted by ARDUBS
