This is our version without the corn tortillas. The carbs are low enough to be doable if you're doing low carb. It comes out a little saucey, but you can serve it on a bed of shredded cabbage and garnish with black olives and salsa. Just make sure you add those in on your food planner. This was made as a big family size dish and could be scaled down.Submitted by CARMEN_819
