In the past year, I've lost almost 50lbs by watching my calorie/fat intake. I prefer to eat several mini-meals rather than three large meals. I try to keep the serving of any mini-meal I make under 200 calories; that being said, I love HUGE portions, so that's what I'm trying to include here.

Cookbook creator says: A LOT of the calories in Thai food come from the coconut milk. I LOVE thai food, so I've come up with a solution that although not quite as good as the real thing, makes me happy. Substitue coconut milk with Unsweetened Original Almond Breeze flavoured with coconut extract. Slash the calories!Submitted by CHEF_MEG

Cookbook creator says: Switch the sugar and brown sugar with the Splenda versions to save calories. Whole wheat flour could up the nutrition a little. I'm going to try swapping the sugar with Splenda (taking the calorie count to almost nothing) and also adding some mint extract. Cookbook creator says: I would use a little less olive oil and maybe sub in a little veg or chicken broth instead (I also use broth instead of oil to brown onions, garlic, etc.!). Also, I would add very little salt because even a small dash leads to high sodium, which = water retention!Submitted by HONEYLEA
