This quick Southern dish contains no added fat and very little added salt in its spicy tomato sauce.
I see so many delicious varities of this. You can even take your basil and sundried tomatoe and make a nice
Pesto sauce. I like to grill my chicken. And cut it in thin strips. And place my sundried tomatoe/feta cheese mixture on top with a drizzle of balsamic vinegrette. And eat is as an Appetizer or over a bed of baby greens. I am even thinking of eating this in
a whole wheat wrap or even a crossiant,but I have not tried it that way as of yet,but you cna always get creative with this. Submitted by TACHANA
This recipe came from the chicken enchilada recipe I submitted earlier. I didn't need to make that many chicken enchiladas, so I made this up to make a slightly different meal. I used the remaining sauce from the chicken enchilada recipe, then added the remaining chicken and added the chicken broth. Submitted by SKEYDOO

I got the idea for this recipe from the Hungry Girl 200 reciepes for under 200 cal cookbook, just substituting chicken for tilapia. It was soooo good and takes care of the BBQ and sweet cravings in one shot. My kids even loved it. Hey, it got a picky three year old to eat...Submitted by DANWERNECKE
