Recovering from an illness, my husband was on a no fat, salt, sugar, beef, pork, dairy, alcohol diet. After 3 weeks, he was allowed all in moderation, minus the alcohol. Both stayed with program; lost weight, feel better, more energy. We change recipes a lot to accomodate our lifestyle changes.

Gazpacho is one of my favorite summer meals, and it's no coincidence that it's also one of the easiest to make. It's simply a chilled, usually blended vegetable soup of Spanish origin.

Cookbook creator says: I cut the milk to 1/2 cup and the cheese to 1/4 cup; changed cumin to 1/2 tablespoon and added a 1/2 tablespoon of red chili flakes .
Be sure to slice the potatoes as thin as possible so they cook; although I did add 15 minutes to the cook time so the dish is thicker rather an soupy.Submitted by STEPFANIER
