This was very good and much easier than stuffing the cheese into the chiles, but with pretty much the same flavor of the traditional method. If you don't care for hot food, you could use plain Monterey jack cheese instead of the pepper-jack. For myself I added more pepper. Well, okay....so it isn't world famous, but it is famous with my family, friends, co-workers, and my son's football team. I came up with this recipe several years ago, when I was doing Weight Watchers. It's great for WLS patients as well (or any dieter), since it has tons of protein.
