This stuffed bell pepper recipe is really delicious! You can use red bell peppers if you like that flavor better. It incorporates your protein, starch, and veggies in one neat package! Brown rice is used for an added nutritional punch.Submitted by KS76017
This recipe is great on its own or cut the breasts into strips for other uses. I usually make a large batch and freeze the strips. The chicken is great in any recipe calling for cooked chicken. Chicken fahitas, pasta sauces or salads are my family's favourites.
I also freeze the marinated chicken in the ziploc bag. I buy in volume when on sale even if I don't have the time to cook it right away.Submitted by JNSCARFE
Super easy, and fun. Not to mention delicious. Recipe is easily altered to serve as many people as you like. Same recipe is awesome for boneless pork too.
You can put white wine in the marinade too, which is really good- about a half cup.

This Jambalaya is lower on fat and sodium than most others. Due to an oversight, I had not added the tomatoes to the recipe. This has been corrected. The tomatoes used are petite diced with no added salt. If you use other than this you will need to account for the extra sodium.Submitted by KRYSTYL_ROSE
