This is a lovely, dark, meaty tasting dish without the meat!
This serves a crowd, with 9 generous half cup servings.
Try to find "French Green Lentils", as they are the best. I purchase mine at an organic grocery. If you cannot find those, then look for a small, roundish, green to brown lentil. Sometimes these are named just brown lentil. If you look closely however, there will be a greenish cast and these are much smaller and also more round than those you find in the one pound bags at the regular grocery store. These Lentils are so much better than those plain, flat, brown ones that you find everywhere. They take a little longer to cook, but are well worth the patience expended!Submitted by DTCELLO

Reminiscent of traditional Meat Loaf but without all the meat, dairy, eggs, or badness. This version is low on calories and fat, reasonable in sodium and carbs, and high in delicious.
Sometimes i'll have 2 servings and it's still quite reasonable. Either way I like it with peas. Mmm.Submitted by KATJWINTER
This recipe comes from Vegetarian Times and is delicious! I used light tofu, however, which cuts an extra 20 calories from each serving. This dish is perfect for a quick dinner (it only takes 25 minutes!) or to pack for lunches!Submitted by BTVMADS
I've included this to go along with my posted recipe for West Indian Red Beans, which, along with this rice, makes for a fantastic Carribean meal! This rice is also wonderful with sesame tofu/chicken or spicy curry dishes.Submitted by BTVMADS
A wonderful, simple Carribean dish. Serve over Coconut Rice (I have a recipe for that, too!) with collard greens in winter or alongside avocado and mango slices in summer.
