This is a great soup and quite hearty to warm one's soul. It makes 18 servings and is even better the next day.
Since our family has to watch sodium for medical issues, we do not use chicken soup base or bouillon when called for and instead use homemade chicken stock. By doing so we can control the sodium as needed. This recipe's nutritional info is if you are using homemade stock/low sodium homemade stock.
You may also cut back on the fat by using a substitute for the butter and/or cheese if you wish. We opted for Smart Balance Buttery Lite Spread for this recipe and nutritional info.
Remember the cooking time is 5 Hours on High or 8 Hours on Low in your Slow Cooker.
Please see the bottom of instructions if you wish to use chicken base instead of stock.

The vegetables for this soup are finely diced so that they will cook quickly, but the 1/4-inch dimension specified should not send you scrambling for a ruler; it' merely an indication that the dice should be small. If your family is iffy about cabbage, leave it out and add one more potato, tow more carrots, several more scallions (to taste) and two stalks of diced celery.Submitted by EEDAVISJR
Only for the garlic lover, a hot dip that is best when coupled with lime flavored tortilla chips. Good on celery and with crackers too. Use it as a marinade on chicken or beef. Not for the faint of heart or sensitive palates.Submitted by SDCO777
Delicious fairly quick soup to make. Good way to get in your veggies!
I also added some extra vegetables to this, some corn and carrots (about 2 C total). Didn't add to nutrition count, but it doesn't amount to much.Submitted by PUSHWAIT
