This is an original recipe from Gena's fabulous website, www.choosingraw.com. I put it in here as it's a new favorite and will make life easier. The dressing has very little oil and a great amount of healthy fat. I tweaked the recipe for what I had on hand. In Sri Lanka, cashew nuts are sold fresh, still tender and creamy-soft. They make a fabulous curry. Over here, you will need to soak, then simmer the cashew nuts to get them back to something close to their original state. Itís definitely worth the bother.
