This is a classic recipe and one of my favourite soups. Very low calorie and very tasty. Although there's similar recipes here on SP, I like to add some lemon juice for some acidity in what otherwise is a very sweet soup.

I got this recipe from Good Housekeeping's Family Vegetarian Cooking, but substituted Quinoa for Bulgur and Butternut Squash for Summer Squash..and Regular Onion for Red Onion, so yay..kind of change a lot but it was still SUPER tasty!Submitted by SPUNKYREDHEAD84

This is the BEST meatless chili I've ever had. I don't remember where we got the recipe, but it cooks up very quick and is great on cold days. The texture of the bulgar completely covers the fact that there's not meat.
My very serious meat eating husband even loves it.

Perhaps it’s the lime dressing, which infuses the dish with flavor without overwhelming it in goo. It could be the quinoa, which has a distinctive nutty taste far superior to white rice and its lamer brethren. Or, maybe it’s the tomatoes, black beans, and scallions, which reminded one friend of "the insides of a really good burrito."
