A healthy snack or breakfast food that has 3.8g fiber per serving, only 3.4 g of sugar. It tastes so delicious, you won't even know how good it is for you!
To decrease calories you could substitute applesauce for some or all of the canola oil, just be sure to use non-stick spray inside your paper muffin liners. The egg could also be replaced with two egg whites. I made this for my son's birthday and was serving it to other people's kids, so I didn't make any lower fat substitutions . I cut down the second cooking time to 15 minutes. They tasted OK, but were a little more solid than I like. The original recipe called for a cup of sugar, and they were melt in you mouth.Submitted by JWATERMANDESIGN
