This cake is a dense, moist, fairly rich consistany - and really should be classed as a Dessert Cake eaten as dessert during a meal, rather than an afternoon tea type cake that is eaten as a snack.
I decorated this cake in 2 ways - the first as an Easter and Spring cake - and I used Cream Cheese Glaze(see recipe) on the top before adding decoration of chickens, flowers, buitterflies, easter eggs etc
The second with fresh fruit - as a Celebration cake - for that special birthday or anniversary or Spring for those who do not celebrate Easter. Submitted by EMMABE1

This can be changed to vanilla, by removing the lemon juice and adding vanilla essence instead
or to Chocolate by removing the lemon juice and adding 1 Tbs pure cocoa powder mixed to a paste with 2 Ths boiling waterSubmitted by EMMABE1
Even though I made this recipe as a Simnel cake - it would be lovely as a Fruit cake - without the almond paste.
If you make the cake as a Simnel cake - the separate recipe for Almond Paste is the correct quantity needed in total, or you can buy the marzipan/almond paste from a store.
Using my Almond Paste Recipe adds 115 calories to each portion.
Instead of Sultanas and raisins you can use 6.75 cups mixed dried fruit
Served in 30 portions each portion of this cake would give 1 serve of dried fruit (1/4 cup) and if finished as a Simnel cake would also supply 1 serve of nuts!!Submitted by EMMABE1
