Coconut flour: high fiber, protein; claims to reduce blood sugars. Good fats, also trans fats. Don't substitute coconut flour for wheat but 10% is OK as long as you add an equal amount of liquid. Gluten free and often dairy free recipes.

One of my favourite coconut flour recipes to date. Gluten free and high fiber and protein so makes a nice snack or breakfast item. You could add raisins or dates but I have not calculated for that nutritionally. Very moist.Submitted by JUSTYNA7
