I love this stew! It is so easy and leaves me feeling satisfied. I use 3/4 cup as a serving. If it is too spicy for you, substitute a can of diced tomatoes for one of the diced tomatoes w/chilies.
Whole grain pasta in any shape or form and lite salad dressing - toss in some lightly steamed veggies and crab meat and it is a meal! I call this perfect pasta salad because I only add stuff I really like - sometimes I add marinated artichoke hearts, black olives, bell peppers and cherry tomatoes are great too.
