Vindaloo is one of my favorite dishes in the world! This spicy Indian curry can be made vegetarian or with meat and is packed with spices. For those new to Indian cooking, I simplified the spice list, choosing five you might already have on hand.Submitted by CHEF_MEG
Didn't get to celebrate Cinco de Mayo, so I am celebrating today with a healthy enchilada dish and chips and salsa!! Yum!! This recipe is high fiber and high protein, 14 grams of fiber and 16 grams of protein per serving!!Submitted by SHELBSYD
Make this ahead of time and then refrigerate for a quick, protein-packed breakfast that's also portion-controlled. Top with salsa (optional) and serve with toast for a complete breakfast.Submitted by COACH_NICOLE
This colorful low-sodium cholesterol-free vegetable baked dish is prepared without any added fat.
This quick and healthy side dish takes just minutes to prepare! And as a bonus, it's an easy way to get the kids to eat their vegetables. (And if you don't like using butter spray, you could melt a few pats of butter and brush the butter on with a pastry brush - whatever your preference!)Submitted by MATCM81
A vegetarian substitute for ground beef - use in place of ground beef for tacos, pasta sauce, lasagna, or wherever your creativity can take you! Not recommended for making patties. Warning: the bouillon cube makes this high in sodium; if you have low-sodium vegetable broth, use in place of the water. Submitted by AMYWRIGHT78
Ditch the toaster pastry. They're loaded with sugar and fat--and not much else. My hand tarts are full of fruit, and if you make them ahead of time your kids can grab them and go.
