My husband loves them, and much better alternative to stuffed cabbage, that he just should NOT be allowed to eat!!
Can also pre-bake peppers at 450 for 15 minutes before filling, then cook again for about 10 minutes after stuffed and they are ready to eat. I've found after a few tries, that wrapping them in foil makes for softer peppers, and closer to my level of cooking skill. It might be me or I'd like to blame my oven - but otherwise I kept burning my peppers! Submitted by SMITSAR
Mama's meatloaf is from the depression era when she grew up, and it is NOT a diet food, so plan your day's menu around this to stay on track. It goes great with a baked potato and green salad. My fave enchiladas to make that my family absolutly loves. Not to bad in fat and calories for the ingredients used to make the dish. I usually save some of the sauce to mix with whole grain white rice to serve on the side. This dish takes some time to make but the family will surely love it.Submitted by WEEDENMJ

The pinto beans in this recipe are cooked ahead, from 1/2 pound of dry beans, which were soaked overnight then cooked for 2 hours. This cooking time is not inculded for this recipe.
Beans cooked like this can be made ahead in larger quantities and freeze well.
