I got this recipe from the Light & Tasty magazine - its a comforting casserole. I prepare the recipe into two baking dishes (4x9) and freeze one for another night. The nutritional info I recorded uses reduced-fat cream cheese and milk - you can make it with the fat-free that the recipe calls for and save some fat & calories.Submitted by WIIGIRL70
Fewer than 70 calories per pancake, you can easily have two for breakfast and still have room for some turkey bacon or eggs! Almost 2g fiber and 4g protein per pancake as well! Good and good for you, can't beat the simplicity either.Submitted by SARAHTHOMAS1

This is a thick hearty BOLD tasting stew. The ginger gives it a kick and the coconut milk adds a delicious texture and rich flavor. I was apprehensive at first as I wasn't too sure how this stew would turn out but it ended up being AMAZING, everybody loved it and had multiple servings, the pot was empty in no time !!! I promise this stew will not disappoint!
(use homemade chicken broth and you can cut the sodium in half in this recipe)
