1 large bell pepper (6 oz)
or assorted baby bell peppers (6 oz)
If 1 large pepper, cut in 4 and seed.
Put 2 tbsp ricotta on each quarter (8 tbsp = 1/2 cup)
If assorted colors of baby bell peppers,
divide the ricotta over the halves.
Add pepper (cayenne or black)

This dish worked out really well, and I was surprised at the low calories per serving. The mustard greens are a nice mix of textures with the stems and leaves cooked together. Its very filling and full of leafy green goodness!!! This could easily become a main course by adding some tofu or chicken to the stir fry.
