This is a vegetarian version of a delicious recipe that I loved in the UK: curried chicken salad on toast. Make it vegan by substituting the mayo for nayonaise brand or another vegan mayo. I got this recipe from the Mayo Clinic website. I was looking for heart healthy high fiber foods for people with high blood pressure and colon problems. This is our family's favorite meal.
