This is a variation of a recipe for Strawberry Bruschetta found on Fitness.com via EatingWell.com. I made the original version and, although I enjoyed it, found that the wheat bread overpowered the strawberries. The next night I decided to use blackberries instead. Voila! The perfect dessert! When the craving for chocolate hits, try this Chocolate-Cinnamon Bread Pudding. The warm melted chocolate makes it a definite comfort food, while the whole wheat bread and evaporated skim milk adds to its nutritional punch.
This is a nice sugar free, lower carb pie. Suitable for company. As it cooks it layers into a nice coconut top crust, a creamy custard center and even a thin bottom crust. I think next time I'll sub out some milk for some FF coconut milk. Submitted by JOEKNEE
I tried this recipe when visiting in Maine at a little country flea market and I personally am not a fan of Rhubarb. When I have a chance to get Rhubarb, I grab it now!
Also my spouse doesn't know there is Rhubarb in it and he loves it. The Rhubarb and blueberries compliment each other. Submitted by RUTHANN05
