This is an adaptation of my favorite slow cooker chicken tortilla soup recipe. If you have the calories to spare, make some tortilla chips in the oven to eat with the soup and top with a bit of sour cream, cheese, avocado and anything else you like! It is very flavorful on it's own, though. Be sure to use high-quality enchilada sauce, as some brands can be greasy. I like to add other veggies in sometimes, such as carrots and squash. part 2 of my butternut squash fascination! This time baked the squash and then put the flesh into a colander overnight to drain. Then I mashed it, mixed in egg & flour (the exact amount of flour will vary due to humidity and wetness of the squash)and created yummy little dumpling!Submitted by JANETMS
Try a two for one: The next time you are turning on the oven to 375 degrees, roast the squash, cool it slightly, peel and package to freeze. You'll have butternut squash on hand whenever you need it, and you can have dinner on the table in no time!
