This is a meal for two but of very small portions because I am diabetic and cannot handle too many carbs. It's incredibly flavorful and is actually quite filling because of the amount of fiber in this dish. This was a recent recipe in Taste of Homes "Healthy Cooking" that I revamped to make even lighter and healthier. I substituted ground turkey for the beef and used fat free sour cream and cheese instead of reduced fat, which cut 90 calories from their light version.
