These low carb Pancakes are soooo good. They have a nutty flavor and are very satisfying. They are also SBD phase 1 friendly. (Flaxseed counts as daily nut allowence)
Try rolling up turkey sausages with the pancakes and drizzle with sugarfree syrup.

"I call this "focaccia" because it is baked in that style -- flat on a sheet pan, and then cut up into whatever sized pieces you want. It works for toast, sandwiches, and other bready uses. It is "rough" in texture like heavy whole grain breads. Since it isn't made with wheat, it doesn't have the same kind of grain as wheat breads, but the carb in flax is almost all fiber. These are an oven-baked version of the Italian frico. It's just basically thin rounds of baked cheese. One of the cool things about it is that they are moldable when still warm. If you drape them over an upturned glass, they will form a cup that you can fill with anything you like. It makes a really nice presentation for a party.
