This recipe came about because I had just made vegetable enchiladas and had leftovers, plus quinoa from earlier in the week. Thankfully, this experiment yielded a hearty, delicious meal. Submitted by STEPFANIER
My family loves pasta salad for picnics. Since I haven't been eating pasta as part of my diet, I would just make it and do without. Well, for Labor Day, I realized I didn't have pasta and decided to use some quinoa I had in the pantry. This is tasty, nutty and HEALTHY!! Your family will most likely NOT miss their pasta. Add green and red pepper, chopped onion, small diced broccolli and cauliflower, cucumber and any garden fresh veggie to make even better!Submitted by JOEKNEE
I can't have gluten, and I was having getting enougg protein and carbs for breakfast. I threw this together, similar oatmeal. I had made amaranth in this way, and liked the seasonings. but I am not a big fan of amaranthSubmitted by THATHEATHERGIRL
Preheat oven to 350 (I used a toaster oven). Mix honey, sugar, earth balance/butter, peanut butter, H2O, and vanilla in medium bowl until smooth/creamy.
Mix flours (not sifted) and baking soda, blend into above mixture.
Blend in chocolate chips.
Use teaspoons to drop preferred size cookie on sprayed (used canola oil spray from Trader Joe’s) sheet/pan.
Bake for 7-10 minutes.
Cool on parchment paper before tasting this yummy delight.
Yield: depends on cookie size, if bite sized; 6 dozen
