A delicious Indian recipe- subtly spicy, with tons of flavor, and vegetarian to boot. This recipe isn't quite quick, but it doesn't take forever, either, and it's a one-pot meal. A word of warning- don't skimp on the olive oil. I know it's tempting, but it's a healthy fat and it's absolutely necessary to prevent sticking and to get the correct flavor in the first steps of the recipe.Submitted by LOUISATHELAST
A simple, warming and hearty soup that's fast to prepare. Sodium appears to be high but that depends on your chosen broth and if you drain and RINSE the beans the sodium will be much lower than reported here. Submitted by MEGABOMB
General Tso's chicken was always my favorite, until I stopped eating meat. This is just as tasty, and so much better for you.
This is great by itself, or served over rice, quinoa, or steamed broccoli.

Cook pasta according to package directions, drain, reserving 1 cup of cooking liquid
In large skillet heat oil over a medium heat, add the garlic and cook until golden. Add the red pepper flakes and cook an additional 30 seconds. Add the broccoli, season with salt and pepper. Add 1/2 cup of cooking water, cover, and cook for 5 minutes stirring occasionally until broccoli is tender. Add an additional 1/2 cup of cooking water to sauce, add drained pasta, toss to coat evenly, cover & cook one minute longer. Divide pasta between 4 bowls and serve immediately.Submitted by NELSEN22
Amazing, plain and simple. In this recipe beef is replaced with protein rich, low fat seitan (wheat gluten) and sour cream is replaced with tangy soy yogurt. Vegan, fish-free Worcestershire and a good red wine vinegar add richness of flavor. Serve over whole wheat pasta.Submitted by LEONALIONESS
