Creamy, sweet, and full of soy protein, this soup will satisfy whether served hot or cold.
This soup is so simple, with the main ingredient being only carrots, and no potatoes or cream to thicken it. I'm sure there are many directions in which the flavors could travel, but I prefer to make it with a predominantly Indian taste. Feel free to adjust the spicy-level as necessary. I like it with a moderate to intense heat, but you can add more or less cayenne and crushed red pepper to suit your own taste. The final product should be smooth and evenly blended, so you will need some kind of food processing device to get it right. Submitted by EHD630
A delcious soup for fall! Had this at a fancy restaurant and was able to track down the recipe. I doubled this recipe for thanksgiving, you may want an extra half cup of squash when doubling. Enjoy! :DSubmitted by PINTO139
Using low-fat milk instead of cream lowers the saturated fat content in this hearty summer soup.
This is just a basic soup mix with fresh veggies added to it. It makes it healthier and more appealing to the eye.
Try a two for one: The next time you are turning on the oven to 375 degrees, roast the squash, cool it slightly, peel and package to freeze. You'll have butternut squash on hand whenever you need it, and you can have dinner on the table in no time!
