(Feel free to change this recipe with what you've got in the fridge. No sweet potatoes? Try zucchini or butternut squash. Swap kale for spinach, Swiss chard or your favorite green! This recipe is for chicken chimichangos baked in the oven. It is an easy dish to make and gets high ratings in my house. Compliment this dish with some mexican rice for a nice dinner under 400 calories.Submitted by GFERBER
A cleaned up, South of the Border Mexican Recipe. I have been told by friends that came over to eat before I started dieting that these were the best marinated fajitas they ever had. I have slightly revised the recipe removing some oils and reducing the calories. Submitted by GFERBER
