This was my mom's recipe. She didn't really use a recipe though. She just threw in what she had and mixed til it "felt right". Tasting all the way through the process to make sure the seasonings were just right. She would also drop it into mounds on a cooking sheet instead of one big pan and they would be these crispy "drop" dressings. They were wonderful.
Also, from this basic recipe you can add anything you like.... Sausage, turkey and drippings drippings, giblets, chicken pieces, pecans.... the possibilities are endless.Submitted by CSPEAKS1
I have lived in the South all of my life and this is the only way I know how to cook collard greens. After reading the nutritional information I don't see any reason to change them they are wonderful just the way they are.Submitted by CSPEAKS1
This is the classic marinade solution that is injected into the meat of turkeys which are deep fried Cajun style.
The secret is to inject the flavors inside of the meat so that the hot oil can't wash them off.
1 c Lemon Juice
1/2 c Liquid Crab Boil
1/2 c Olive Oil
1/2 c Butter
2 T Onion Powder
2 T Garlic Powder
2 T Cajun Seasoning
1 t Tabasco
1 t Cayenne Pepper
Combine all ingredients in a saucepan. Heat until butter is melted. Stir and continue heating until sauce is liquefied. Inject the marinade while it is still hot enough to stay liquid. (cont...)
