My "tradition" of roast beef, with some added nutritional value from adding more vegetables. Rutabagas look and sound weird to people, but they're easy to cook in this recipe, and VERY high in potassium!Submitted by LEAKAY59

After nearly a year, I'm still in the process of Sparking some of my standard recipes. Here is my son's favorite, and it stayed under 300 calories per serving! (Pasta is NOT figured in) I always make a huge batch and freeze in dinner-sized portions - I find it more economical that way, both in dollars and time.Submitted by LEAKAY59
I handed my cooking club magazine to DH a couple of days ago when I left for work and told him to pick a recipe for next week. This is the one he chose, and I've modified it a bit to fit our budget better (theirs called for all red peppers!) and get more colors in it. Submitted by LEAKAY59

I lightened this up from another recipe, and reduced the sodium, just by changing the cheese. Also made the serving size smaller, as 8 eggs plus everything else should make more than the original 6 servings, at least in my house!Submitted by LEAKAY59
